A frozen blend of berries, pineapple, sour mix, mint infused simple syrup and tequila makes for the most refreshing summer drink you could imagine. These Tequila Slushies are just the right amount of sweet and tangy and I guarantee you’ll be craving them all summer long!

Tequila slushies are exactly what you need to cool down this summer! The idea for these slushies came from the restaurant my fiancé used to bartend at. He was in charge of infusing tequila in pineapple to be used in margaritas. But at the end of the night, the restaurant would throw the pineapples away. So, he decided to bring the tequila soaked pineapples home one night and stuck them in the freezer. We blended the pineapple with some frozen berries, sour mix and a simple syrup and the result was too good not to share. The berries and pineapple are a refreshing combination, especially with the subtle hints of mint from the simple syrup. These tequila slushies will be your favorite summertime drink!

Ingredients for Tequila Slushies

Mint infused simple syrup:

You can make the simple syrup ahead of time and store in the refrigerator for up to 1 month.

  • granulated sugar
  • water
  • fresh mint leaves

Slushies:

If making a tequila infusion: Cut an entire pineapple into bite-sized cubes. Place pineapple cubes in a large jar then add an entire 750ml bottle of tequila. Let sit at room temperature with an air tight lid for at least 24 hours. Remove the pineapples from the jar and place in a large Ziploc bag. Place in the freezer until frozen then remove 1 cup of the frozen pineapples when making the slushies. Save the infused tequila for other cocktails!

  • lemon juice
  • tequila – I recommend using a silver tequila for this recipe. My go to is Espolon Blanco for flavor and quality.

  • high powered blender
  • juicer
  • medium saucepan
  • stirring spoon
  • strainer
  • measuring cups and spoons

How to Make Tequila Slushies

Mint infused simple syrup:

  1. Combine sugar, water and mint leaves in a medium saucepan and bring to a boil. Let simmer then remove from heat and let steep. Pour the syrup through a fine mesh strainer into a glass jar and let cool completely.

Slushies:

  1. Add the pineapple, berries, citrus juices, tequila and simple syrup to a high powered blender and blend until smooth. Serve immediately with a slice of fresh fruit.
