A frozen blend of berries, pineapple, sour mix, mint infused simple syrup and tequila makes for the most refreshing summer drink you could imagine. These Tequila Slushies are just the right amount of sweet and tangy and I guarantee you'll be craving them all summer long!

Tequila Slushies

Mint Infused Simple Syrup
 1 cup granulated sugar
 1 cup water
 1 cup fresh mint leaves

 1 cup frozen pineapple (see directions below for pineapple infused tequila)*
 2 cups frozen mixed berries - strawberries, blueberries, raspberries
 juice of 1 orange
 juice of 2 limes
 juice of 1 lemon
 ¾ cup tequila*
 fresh mint - optional garnish

Combine sugar, water and mint leaves in a medium saucepan and bring to a boil, stirring until the sugar dissolves completely. Allow to simmer for 1 minute then remove from heat and let steep for 30 Minutes. Pour the syrup through a fine mesh strainer into a glass jar and let cool completely.

If making a tequila infusion: Cut an entire pineapple into bite-sized cubes. Place pineapple cubes in a large jar then add an entire 750ml bottle of tequila. Let sit at room temperature with an air tight lid for at least 24 hours. Remove the pineapples from the jar and place in a large Ziploc bag. Place in the freezer until frozen then remove 1 cup of the frozen pineapples when making the slushies. Save the infused tequila for other cocktails!

Add the pineapple, berries, citrus juices, tequila and 1/2 cup of simple syrup to a high powered blender and blend until smooth. Serve immediately with a slice of fresh fruit and garnish of fresh mint. Enjoy!
